    Masterclass in Fig Bread
    with Michael Gassen of Noe Valley Bakery

    Of all the breads that baker Michael Gassen has made since he and his wife Mary opened Noe Valley Bakery in 1995, none has been so enduringly popular as their fig bread. Inspired by his love of the figs from his grandfather’s backyard tree, he has perfected a bread that is unique in that it requires no kneading. While Michael demonstrates how he prepares his bread he will also be discussing the role kneading plays in the bread-making process. In addition to samples of wine and cheese along with the fig bread, every attendee will be bringing home a loaf of this very special San Francisco, locally produced delicacy.

    Here’s a unique opportunity to work with a mole master! Dominica Rice of Cosecha has over 30 years of experience cooking in Mexico City and at Chez Panisse. Join her as she teaches you how to make traditional mole, as well as how to enjoy some of Mexico’s finest mezcals. Afterward, we will all sit down to enjoy a traditional Mexican supper comprised of moles made in class, such as mole Colorado de Oaxaca. Cosecha prepares everything from scratch every day, including handmade tortillas, pastries and complex traditional entrees, as well as seasonal salads and soups.

    Everyone loves dumplings. They make people smile. Making them with friends is extra satisfying. Join acclaimed cookbook author Andrea Nguyen to explore the world of dumplings. You’ll learn how to prepare fillings and dough, then wrap, shape and cook the dumplings to perfection.

    Andrea will help you master Asian dumplings, many of which require only supermarket ingredients. She’ll also share shopping tips and culinary history from her book, Asian Dumplings, considered one of the best Asian cookbooks by Cooking Light magazine and an International Culinary Association of Professionals award finalist.

    This is a 2-hour, hands-on class so be prepared for lots of cooking, eating and learning! The menu includes: Pork and Shiitake Siu Mai, Lamb and Garlic Chive Pot Stickers, Kimchi Dumplings, Har Gow Shrimp Dumplings and Sesame Seed Balls.
